As a creamery that prides itself on old-fashioned techniques, Foothills Creamery continues to use old fashioned vat pasteurization instead of HTST pasteurization – a process many ice cream and butter makers have adopted to reduce time and costs. Vat pasteurization is what makes Foothills’ ice cream and butter richer, creamier and more full-bodied.
